Light salmon in color, this builds from wood spice in the aroma to a complex crazy-quilt of flavor, multidimensional and mouthwatering on the youthful edge of maturity. The structural integrity given by limestone soils yields to a shellfish brothiness, balancing a sense of elegance and fullness of flavor. Serve this in a red wine glass with roast arctic char smothered in chanterelles.
