2010 Knights Valley Reserve Cabernet Sauvignon

A bright, sunny cabernet, this wine has elasticity in its tannins, seeming to snap the tobacco-scented dark berry fruit into place. Laurie Hook bases the reserve on vineyards on rockier soils, where the grapes gain greater concentration. This vintage lasts with a bold, earthy freshness, the tannins getting richer and more chocolate-edged as it takes on air (think Ancho chile mole). The dynamic flavors will add energy to a steak. 2010 Knights Valley Cabernet Sauvignon (Best Buy)

Before Laurie Hook became Beringer’s chief winemaker, she was responsible for the wines from Knights Valley, where Beringer farms 600 acres at elevations reaching 450 feet. In 2010, she’s melded the fresh black currant flavors of the fruit from these rocky hillsides into a silken textural pleasure, balancing sweet and savory elements in a plump and luxurious cabernet. Her 2010 Knights Valley Reserve received 93 points in the June issue, another exceptional performance for the vineyard in this vintage.

2010 Napa Valley Cabernet Sauvignon (Best Buy)

A classically proportioned, black currant–scented Napa Valley cabernet, this wine is equally rich in its small berried fruit and its tannins. Dark in tone, broad in texture, compelling in the freshness of its fruit, this drinks well now and will age with grace.

2007 Napa Valley Nightingale

A stylized dessert wine based on early experiments introducing botrytis into ripe sauvignon blanc and semillon, this vintage is amber in color and caramelized in flavor. It yields scents of pineapple and marzipan, carried along on a creamy texture, finishing clean. Chill it for a savory pear tart with ice cream. (1,212 cases)
